On October 16, 2025, the South Dakota Central Chapter of Credit Unions will join credit unions from around the world to celebrate International Credit Union (ICU) Day. ICU Day celebrates the spirit of the global credit union movement; and the role financial cooperatives play in improving the communities they serve and the lives of their members.
International Credit Union (ICU) Day has been celebrated on the third Thursday of October since 1948. We invite both members and nonmembers to celebrate the 77th anniversary of ICU Day on Thursday, October 16th visit a local credit union to help celebrate the Credit Union Difference!
The South Dakota Central Chapter of Credit Unions is made up of six credit unions, which include: HB Telco Federal Credit Union (FCU), Dakota Rail Line FCU, Huron Area Education FCU, M-O FCU, Dakotaland FCU, all of Huron, and Oahe FCU of Pierre. Additionally, the Pierre branch of Black Hills FCU is an associate chapter member. The Central Chapter organizes meetings and workshops designed to educate credit union employees on a variety of topics.
The Central Chapter is dedicated to supporting community initiatives that embody the People Helping People philosophy. Currently, they are organizing a food and supply drive to benefit the local Salvation Army food pantry, aimed at replenishing the shelves during the holiday season.
Dorito Casserole
Ingredients
14.5 ounce package nacho cheese-flavored Doritos, lightly crushed
2 to 3 cups rotisserie chicken (shredded and cut into small pieces)
1 can of black beans (rinsed and drained)
15.25 ounce can corn, drained
8 oz. Colby jack cheese (shredded and divided)
10 oz. mild diced tomatoes and green chiles (Ro-tel)
4 oz. can green chilies
10.75 ounce can condensed cream of chicken soup
8 ounces sour cream
1 tablespoon taco seasoning
Preheat oven to 350 degrees. Lightly spray a 913-inch baking dish with cooking spray. In a large bowl, stir together the chicken, black beans, corn, 1 cup of the cheese, Ro-tel, green chiles, cream of chicken soup, sour cream and the taco seasoning. Spread the mixture in the baking pan.
Bake for 20 minutes. Spread chips evenly over the top, then sprinkle with the remaining cheese. Bake another 5 to 7 minutes or until the cheese is melted.
Cinnamon Roll French Toast Casserole
Ingredients
17.5 oz can refrigerated cinnamon rolls with icing
1 Tbsp. melted butter
2+ eggs
2 Tbsps. milk
1 Tbsp. cinnamon
tsp. vanilla
Icing
cup powdered sugar
1 Tblsp. cream cheese, softened
2 tsp. milk
In small baking dish, melt butter. Cut cinnamon rolls into sixths spread pieces over melted butter.
In bowl, combine eggs, milk, cinnamon & vanilla pour over rolls. Bake at 350 degrees for 30-35 minutes. Tops should be golden & centers set. Let cool for 5 mins.
Combine icing ingredients until smooth pour over casserole. Refrigerate leftovers.
Ravioli Lasagna
Ingredients
1 lb. ground beef
1 lb. Italian sausage
1 onion, chopped
3 garlic cloves, minced
1 egg
1 cup grated Parmesan, divided
1 tsp garlic powder
24 oz bag cheese ravioli (frozen type)
32 oz. marinara sauce
16 oz. cottage cheese
cup freshly chopped basil
2 cups mozzarella, shredded
Salt & pepper, to taste
Preheat oven to 350 degrees & remove ravioli from freezer to thaw slightly.
Grease 9×13 pan (deep dish is best).
In large skillet, cook beef, sausage & onion with salt & pepper drain if needed when meat is almost done add garlic. Add marinara & simmer until heated through, about 5 minutes.
Meanwhile, in medium bowl add cottage cheese, egg, basil, cup parmesan & garlic powder.
Spread 1/3 of the meat sauce into pan. Top with half the raviolis in single layer, half of the remaining meat sauce, half cottage cheese mixture, half the mozzarella & all remaining Parmesan. Repeat layers.
Cover pan loosely with foil bake for 30 minutes. Remove foil bake until golden & bubbly, about 15 minutes.
Pumpkin Pie Crunch
Ingredients
16 oz. can solid pack pumpkin
12 oz. can evaporated milk
4 tsp. pumpkin pie spice
1 cups sugar
3 eggs
tsp. salt
1 cup chopped pecans 1 cup melted butter
1 box moist deluxe yellow cake mix
Cool whip, topping
Grease 9×13 dish, bottom only. Combine pumpkin, milk, spice, sugar, eggs & salt.
Pour into prepared dish. Sprinkle dry cake mix over pumpkin mixture top with pecans. Drizzle with melted butter. Bake at 350 degrees for 50-55 minutes or until golden brown. Cool completely serve with cool whip. Refrigerate leftovers.
Root Beer BBQ Pulled Pork/Venison
Ingredients
1 roast (pork, deer, beef, etc.)
1 packet beefy onion soup mix
1 small bottle BBQ sauce
1 red onion, diced
1 can root beer (or Dr. Pepper)
Add all ingredients to crockpot. Cook on low for 6-7 hours. Remove meat shred. Add meat back to crockpot.
Optional: add 1 tablespoon corn starch to thicken, stir well cook another 15 minutes.
Serve on buns.
