French Onion Baked Rice
From Nancy Hein

Faux Crockpot Lava Cake
From Colleen Smith, Vice President
Makes 12 nice-sized servings.
Use a 6-to-7 quart crockpot and grease the sides and bottom.
Step No. 1 — Use 1 box of brownie mix, for a 9-by-13-inch pan of brownies. Follow the instructions on the box to make your brownie mixture, using eggs, water, and oil as shown on the box. Mix all ingredients until incorporated. Pour brownie mixture into your crock-pot.
Step No. 2 —
1 box chocolate instant pudding mix
2 cups milk
Whisk well. Carefully pour pudding mixture over the brownie mixture. DO NOT STIR!!!
Step No. 3 — Place 2 paper towels across the top of the crockpot and cover with lid to hold towels in place. The paper towels will absorb moisture from the cooking process. Set your crock pot to high and cook for 2 1/2 to 3 hours — check to see if most of the pudding mixture looks “set” and if the cake mixture seems to be done on the bottom. The sides of the crock pot should not show any burning.
Step No. 4 — Serve in bowls and top with ice cream. Other combinations of puddings, cake mix, etc. can also be used. I used sugar-free pudding.
